3 Multigrain Goodbye Gluten gluten-free wraps, cut in finger sized strips
2 lbs. (4-6 c.) of turkey breast, cooked and shredded
32 oz. low-sodium chicken broth
1 small yellow onion, fine chopped
1 c. of diced tomatoes, undrained
1 c. carrots, fine chopped
1 c. corn kernels
4 tbsp. cornstarch
1/2 tbsp. paprika
1/4 c. fresh parsley leaves, minced
- Shred the turkey meat and add it to a large saucepan with the broth, onion, corn, carrots, tomatoes and paprika. Cook over medium heat and cook until boiling.
- Remove 2 cups hot liquid. Using a medium bowl, stir cornstarch into a 1/4 cup of water until smooth. Slowly add to pot while lightly stirring and cook until bubbly.
- Add Goodbye Gluten gluten-free wrap strips and heat until warmed through, about 3-5 minutes.
For a crispy twist: fry strips in hot oil until golden, then add to stew when serving. Add a pinch of parsley per serving.
