Southwest Shredded Pork Wraps

Makes 6 servings

products for all recipes.

INGREDIENTS:

6 Goodbye Gluten gluten-free wraps (plain or multigrain)
3 lb. boneless pork loin 
1 tbsp. cumin
1 tbsp. coriander
1 tsp. chili powder
1 tsp. minced garlic
1 tsp. sea salt
1 can (15-oz.) diced tomatoes, undrained
1 can (15-oz.) whole kernel corn, rinsed and drained
1 can (15-oz.) black beans, rinsed and drained
1 1/2 c. shredded sharp cheddar

Southwest Shredded Pork Wraps

DIRECTIONS:

  1. Cube pork in 3” pieces and toss with cumin, coriander, chili powder, salt and garlic in a large bowl. Place seasoned pork and tomatoes in slow cooker. Cover, cook on LOW 6 to 8 hours. Shred pork into bite sized pieces with two forks.
  2. Stir in corn and beans. Cover, cook 15 minutes or until heated through.
  3. Heat gluten-free wraps 2-3 minutes in foil in the oven at 350°F. Spoon pork mixture onto wrap. Fold one end over slightly and roll up from side burrito style. Serve hot, topped with shredded cheese.
