Gluten-Free Nosh Apples

Makes 6 servings

Be sure to purchase gluten-free
products for all recipes.

INGREDIENTS:

6 lg. apples, cored & hollowed for stuffing
1/4 tsp. nutmeg
1 tsp cinnamon
1/4 c. of fine chopped pecans
1 c. of light cream (or almond milk)
1/4 c. pure honey
5 slices of Multigrain Goodbye Gluten gluten-free bread, lightly toasted and cubed
1/4 c. of golden raisins
2 Tbsp. unsalted butter, cut into twelve 

Gluten-Free Nosh Apples

DIRECTIONS:

  1. Preheat your oven to 375 degrees and boil 1 cup of water.
  2. Heat a small pan on medium heat and toast your spices and nuts. Toast until fragrant, around three minutes. Watch to prevent burning.
  3. While you wait for your ingredients to toast, cut off the top of your apple.
  4. Remove the core of each apple using a paring knife or any small sharp knife and be sure to remove all the pits and make sure the opening is at least 2” in diameter.
  5. Add the cream (or almond milk) and honey to the nuts/spices and continue to heat.
  6. Once the mixture is at a light simmer, stir in the toasted bread and raisins.
  7. Cook the stuffing for a few minutes, until the liquid is absorbed and stir every few minutes.
  8. Place the apples into a small baking dish and fill with the stuffing.
  9. Place a piece of butter on top of each apple's filling then add the boiling water into the baking dish with the apples.
  10. Cover with aluminum foil and bake for 20-30 minutes then add a second piece of butter, leave uncovered and bake 10 minutes until golden and toasty.
  11. Use your favorite gluten-free caramel or butterscotch sauce.
