Cajun Chicken Fajitas

Makes 4 servings (2 fajitas each)

Be sure to purchase gluten-free
products for all recipes.

INGREDIENTS:

6 Goodbye Gluten gluten-free wraps (plain or multigrain)
1 tbsp. extra virgin olive oil
1 red bell pepper, seeded and cut into thin strips
1 green bell pepper, seeded and cut into thin strips
1 yellow bell pepper, seeded and cut into thin strips
1 medium white onion, peeled and cut into thin strips
1 lb. cooked chicken breasts, cut into thin strips
1 tbsp. purchased gluten-free Cajun seasoning
1 tsp. salt
1/2 tsp. of paprika (optional)

Cajun Chicken Fajitas

TOPPINGS:

1 c. mashed avocado 
1 c. chopped tomatoes 
1 1/2 c. shredded Chihuahua or Monterey Jack cheese
2 c. fine sliced leafy lettuce

DIRECTIONS:

  1. Heat the oil in a large skillet over medium heat. Cook the peppers and onion 12 minutes, until soft and lightly browned. Add chicken, seasoning, salt, paprika and heat, stirring to blend all of the ingredients to serving temperature.
  2. Heat gluten-free wraps by baking in foil for 2-3 minutes at 350°F.
  3. Assemble your fajitas as desired. Serve with toppings.
