Breakfast Quesadillas

Makes 2 servings

Be sure to purchase gluten-free
products for all recipes.

INGREDIENTS:

4 Goodbye Gluten gluten-free wraps (plain or multigrain )
1/2 c. light sour cream
1/2 c. baby spinach  leaves
1/3 c. thinly-sliced red onion
6 lg. eggs, scrambled
6-oz. turkey bacon, cooked, torn into bite-sized pieces
1 c. goat cheese crumbles or shredded white cheddar

Breakfast Quesadillas

DIRECTIONS:

  1. Pre-heat oven to 350°F. Add foil to a large baking sheet and coat with cooking spray.
  2. Lay 2 wraps on baking sheet. Spread each with half of the sour cream, spinach leaves, red onion, egg, bacon and cheese. Top each with a second wrap then coat the tops with cooking spray.
  3. Bake 10 to 15 minutes, or until heated through. Remove foil and quesadillas from the sheet and cut into quarters. Serve immediately.
